Maintaining Knives
When purchasing a Carbon Steel or Damascus knife it is necessary to maintain them properly in order to ensure they last longer and don’t rust overtime.
Why the Damascus as well? Because the Damascus I use is a combination of 1095 (High Carbon Steel) and 15N20. Since there is carbon steel in the composition of the Damascus it must receive the same treatment as a carbon steel knife.
What happens to the steel is something called oxidization. Which is a natural chemical reaction that takes place on the surface of the steel. Something called a patina will start to appear on the knife’s surface which is unavoidable, however it serves as an imprint of your use of the knife. Each knife will have it’s own patina in terms of contrast and shape. Think of it as a footprint of every meal you prepared using this knife.
Below are 3 tips on how to maintain your knife
Wipe.
During your use of the knife always keep 2 towels handy. The first one is used to wipe any food that is stuck to the knife’s surface after every cut. The second is used to wipe your knife in the end after you’re done with the cutting. It’s okay to wash the knife in the sink just make sure it’s dried properly after. NEVER leave it in the sink or wash it with the dishwasher.
Oil & Store.
If you’re planning on not using the knife for some time ensure that your knife is completely dry and clean then simply place 2 drops of mineral oil on each side of the knife and wipe it across all the metal parts of the knife making sure the oil completely covers all surfaces. Cutting Boards.
Always use wood cutting boards never ceramic,stone,or marble. Otherwise your knife WILL become dull after your first cut!
